Job Description

Primary Functions : 

 This position will be transitioning to a swing/second shift in the future. (2pm-10pm)

VAT Operations  

The VAT Pasteurizer Operator is responsible for safely manufacturing ice cream and gelato base in the VAT Pasteurizer. All products must be produced following the regulations of the most recent published Pasteurized Milk Ordinance (PMO) as issued from the FDA. Process tasks include but are not limited to:

• Recording and document times and temperatures on circle charts and data sheets 
• Lifting 50 to 60 pounds and holding above shoulders for short amounts of time 
• Configuring pipes, hoses and pumps will require bending and squatting 
• Fill mixing tank with raw materials 
• Properly cleaning and sanitizing the system by using specialty cleaning chemicals 
• Empty VAT into mobile tanks, holding tank or buckets with lot number labels on each 
• Maintain a clean and sanitary VAT room at all times 
• Maintain an organized VAT room and all components including connectors, seals and pumps 
• Work with State inspector during VAT inspection 

Inventory Operations  

This position is responsible for maintaining inventory by counting, rotating and organizing both the finished base produced and the raw materials for producing the base product. Tasks include but are not limited to 

• Rotate older products for first in first out use method. 
• Count inventory of all dairy products, sugars, non-fat milk, cocoa powder and stabilizers and communicate to office staff daily. 
• Properly receiving dairy products from vendor 
• Recording lot numbers of received products 

Food Safety  

Working at Muse Gelato requires the employee to always follow all federal, state and company food safety laws. Failure to do so may result in immediate termination. 

• Food Handler certificate (Preferred)
• HACCP understanding and training required (Preferred)
• Understanding of PMO and the pasteurizing process and principles including Critical Control Points. (Preferred)

Working Environment and Physical Requirements  

Working environments vary in temperature during the process. The VAT room will raise in temperature from 78F to 85F. When working in a cooler or freezer temperature range between 32F to -20F. Proper freezer jackets are provided for safe operation. The VAT room is a very wet area. Slip resistant and water proof shoes are required. Physical lifting of 50 to 60 pounds is required. At times these will need to be lifted slightly above the shoulders. The action is slowly pouring dry ingredients into the mixing tank. During set-up, process and cleaning squatting, leaning and bending will be required throughout the day. 

This is an environment that uses allergens such as milk, peanuts, tree nuts, soy, egg, and wheat.
